Preheat the oven to 500 degrees F (260 degrees C). Line a baking sheet with a double layer of aluminum foil and lightly grease it. (5 minutes)

In a medium bowl, combine the bread stuffing mix with the boiling water and 6 tablespoons of the melted butter. Stir until well combined. Spread the stuffing evenly over the prepared foil. (5 minutes)

Place the seasoned bluefish fillets on top of the stuffing. Brush the fillets with the remaining 2 tablespoons of melted butter and sprinkle evenly with the minced onion. Arrange the dill sprigs over the top of the fish. Carefully crimp the edges of the foil together to create a sealed packet. (10 minutes)

Place the baking sheet on the center rack of the preheated oven and bake for 10 minutes. Then, reduce the oven temperature to 400 degrees F (200 degrees C) and continue to bake until the fish flakes easily with a fork, approximately 20 to 30 minutes. (40 minutes)
For a richer flavor, brown the butter before melting it. Be careful not to burn it!
If you don't have fresh dill, dried dill can be substituted. Use about 1 teaspoon.
Feel free to add other fresh herbs such as parsley or thyme to the stuffing.
To check for doneness, gently insert a fork into the thickest part of the fish. If it flakes easily, it's ready.
