In a large saucepan or Dutch oven, combine the beef chunks, beef broth, and water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the beef is nearly tender, about 1 to 1 1/2 hours.

For a richer flavor, sear the beef chunks in a little olive oil before adding the broth and water.
Feel free to adjust the vegetables based on your preference and what's in season. Other great additions include green beans, peas, or squash.
If you don't have fresh oregano, you can substitute 1/2 teaspoon of dried oregano.
For a spicier stew, add a pinch of red pepper flakes along with the paprika.
