Preheat the oven to 350 degrees F (175 degrees C). Generously coat a loaf pan with cooking spray. (5 minutes)

Coat a medium skillet with cooking spray. Add the chopped onion and minced garlic and sauté over medium heat until the onion is softened and translucent. Set aside to cool slightly. (10 minutes)

In a large bowl, gently combine the ground turkey, cheese cubes, crushed crackers, 1/3 cup ketchup, egg, garlic salt, salt, pepper, and the cooled onion and garlic mixture. Mix until just combined to avoid overworking the turkey. Transfer the mixture to the prepared loaf pan. Place the loaf pan on a baking sheet and cover loosely with aluminum foil. (15 minutes)

Bake in the preheated oven for 1 hour. Remove the foil and carefully drain any excess juices from the loaf pan. Spread the remaining 1/4 cup of ketchup evenly over the top of the meatloaf. Continue baking, uncovered, until the meatloaf is cooked through and no longer pink in the center, about 30 more minutes. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C). (90 minutes)

Let the meatloaf rest for 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender and flavorful meatloaf. (10 minutes)

For an extra layer of flavor, consider adding a tablespoon of Worcestershire sauce to the meat mixture.
Feel free to substitute your favorite cheese for Velveeta®. Cheddar, Monterey Jack, or a blend of cheeses would all work well.
If you prefer a drier meatloaf, omit the foil during the first hour of baking.
Serve with your favorite sides, such as mashed potatoes, green beans, or a simple salad.
