For a smoother soup, use an immersion blender to partially blend the soup after adding the corn and cream cheese. Be careful not to over-blend, as you want to retain some texture. Adjust the amount of cayenne pepper to your preference. A little goes a long way! Fresh corn kernels can be substituted for canned. Use about 3 cups of kernels cut from fresh corn on the cob. For a richer flavor, use heavy cream instead of milk.
