For a richer flavor, use a combination of Monterey Jack and sharp cheddar cheese in addition to the Pepper Jack.
Add a can of drained and rinsed black beans or corn for added texture and heartiness.
If you don't have Mexican oregano, regular oregano will work, but use slightly less as it's not as potent.
For a spicier kick, add a pinch of cayenne pepper or a few drops of your favorite hot sauce.
