Bring a generous pot of water to a rolling boil over high heat. (2 minutes)

Add the ramen noodles and cook according to package directions, usually 2-4 minutes, until al dente. Reserve about 1/4 cup of the noodle cooking water before draining.

While the noodles are cooking, in a wok or large skillet, combine the sesame oil, soy sauce, and chili oil over medium-high heat.(1 minute)

Add the minced garlic to the wok and stir-fry until exquisitely fragrant and lightly golden, being careful not to burn it, about 30-45 seconds. Remove from heat immediately.

Drain the ramen noodles thoroughly and add them to the wok with the garlic chili oil mixture. Toss vigorously to coat every strand, adding a tablespoon or two of the reserved noodle water if needed to create a luscious sauce. (1 minute)

Transfer the noodles to a serving bowl. Garnish generously with black sesame seeds and sliced green onions. Serve immediately and prepare for an explosion of flavor!

For an extra layer of flavor, try adding a splash of black vinegar or a drizzle of Chinese sesame paste.
Adjust the amount of chili oil to your preferred spice level. Start with less and add more to taste.
Fresh ramen noodles are highly recommended for the best texture, but dried ramen or even spaghetti can be used in a pinch.
Be careful not to burn the garlic when stir-frying, as it will become bitter. Keep a close eye on it and remove the wok from the heat if needed.
