For an extra layer of flavor, try roasting the garlic before adding it to the mashed potatoes. Simply wrap the garlic cloves in foil with a drizzle of olive oil and roast at 400°F (200°C) for 30-40 minutes, or until soft and fragrant. Let cool slightly before squeezing the roasted garlic into the milk mixture. Feel free to experiment with different types of cheese. Gruyere, Monterey Jack, or even a smoked Gouda would all be delicious additions. This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours. Add about 10-15 minutes to the baking time if baking from cold.
