Follow The Directions

01

Step

On a clean work surface, mound the flour and create a well in the center. (5 minutes)

02

Step

Crack the eggs into the well, add a tablespoon of oil and water. Use a fork to gently whisk the eggs together, gradually incorporating the flour from the sides of the well until a shaggy dough forms. (10 minutes)

03

Step

Knead the dough for 8-10 minutes, until it becomes smooth and elastic. If the dough is too dry, add water, 1 teaspoon at a time. If it's too sticky, add flour, 1 tablespoon at a time. Form the dough into a ball, lightly coat with oil, wrap in plastic wrap, and let rest for at least 30 minutes. (40 minutes)

04

Step

Lightly flour the work surface. Divide the dough into four equal portions. Roll out each portion to 1/8-inch thickness. (20 minutes)

05

Step

Cut the rolled-out dough into your desired noodle shape using a sharp knife or pasta cutter. (10 minutes)

06

Step

In a large pot, bring salted water to a rolling boil. Add the fresh noodles and cook for 2-4 minutes, or until they float to the surface and are tender but still firm to the bite. Drain immediately. (10 minutes)

07

Step

While the noodles are cooking, melt the butter in a saucepan over medium heat. Continue cooking until the butter turns a nutty brown color and emits a fragrant aroma. Add the minced garlic and salt, stirring constantly for about 30 seconds, or until fragrant. Be careful not to burn the garlic. (10 minutes)

08

Step

Add the drained noodles to the saucepan with the brown butter and garlic sauce. Toss to coat evenly. (5 minutes)

09

Step

Serve immediately, garnished with fresh parsley and grated Parmesan cheese. (5 minutes)

For best results, allow the dough to rest for at least 30 minutes to relax the gluten, making it easier to roll out.
Dust the noodles with flour after cutting to prevent them from sticking together.
The brown butter sauce can be adjusted to taste. Add a pinch of red pepper flakes for a little heat, or a squeeze of lemon juice for brightness.
Freshly made egg noodles can be stored in the refrigerator for up to 2 days or frozen for up to 2 months. If freezing, arrange the noodles in a single layer on a baking sheet and freeze until solid, then transfer to a freezer bag.
