Follow The Directions

01

Step

In a pressure cooker, combine the lentils, onion, carrots, and cabbage leaves. Cover with 1 1/2 inches of water and add the vegetable oil. (5 minutes)

02

Step

Seal the pressure cooker and cook for 10-15 minutes, then allow it to cool until the pressure reduces naturally before opening. (20 minutes)

03

Step

Carefully transfer the soup to a food processor or blender and puree until smooth. (5 minutes)

04

Step

Return the pureed soup to a stock pot and place over medium heat. Stir in the cumin, black pepper, cinnamon, allspice, cloves, and nutmeg. (2 minutes)

05

Step

Bring the soup to a gentle simmer, then stir in the dry onion soup mix. Continue to simmer until the soup thickens slightly. (10 minutes)

06

Step

Just before serving, season to taste with fresh lemon juice and salt. (2 minutes)

For a richer flavor, consider using chicken or vegetable broth instead of water.
If you prefer a chunkier soup, reserve some of the cooked vegetables before pureeing and stir them back in at the end.
A squeeze of lemon juice brightens the flavors and adds a touch of acidity.

I added a bay leaf while it simmered, and it gave it an even deeper flavor. Will definitely make this again!

I've made this recipe several times, and it's always a hit. I sometimes add diced potatoes or sweet potatoes for extra heartiness.

  • Geovany Stoltenberg

I used red lentils instead of brown, and it turned out great. It was a bit creamier.

Easy to make and so delicious! I doubled the recipe and froze half for later.

I found it a bit too thick, so I added some vegetable broth. It was perfect after that!
