Develop the Gravy (10 minutes): Gradually whisk in 1 cup of the reserved turkey drippings (de-fatted) into the roux, ensuring no lumps form. Continue whisking until the gravy thickens and becomes smooth. If using, add the white wine and cook for another 2 minutes to allow the alcohol to evaporate.

Adjust and Finish (5 minutes): Stir in 1 cup of chicken or turkey broth. Bring the gravy to a simmer, stirring occasionally, until it reaches your desired consistency. If the gravy is too thick, add more broth or drippings. Season with sea salt and freshly ground black pepper to taste. If using, add a sprig of rosemary or thyme during the last few minutes of simmering to infuse the gravy with herbal notes. Remove the herb sprig before serving.
