Bring the liquid to a simmer, then reduce heat to low, cover, and cook for 4 to 5 hours, or until the pork is extremely tender and easily shreds with a fork. Stir occasionally to prevent sticking, and adjust seasonings to taste.

For an even richer flavor, brown the pork shoulder on all sides before adding the wine and water.
Feel free to add other meats such as Italian sausage or beef short ribs for a more complex flavor profile.
If you prefer a smoother sauce, use an immersion blender to partially blend the gravy at the end of the cooking time. Be careful not to over-blend.
