In a medium saucepan, combine the rice wine vinegar and raw sugar. Bring to a boil over medium-high heat, stirring constantly until the sugar is completely dissolved. (Approximately 2 minutes)

Reduce the heat to medium and continue to cook, stirring frequently, for 10 minutes, allowing the mixture to slightly reduce and thicken.

Add the chopped mangoes, apricots, and fresh ginger to the saucepan. Continue to cook over medium heat, stirring occasionally, until the fruit is softened and begins to break down. (Approximately 10 minutes)

Carefully transfer the hot fruit mixture to a blender or food processor. Add the honey and fresh lime juice.

Process until the glaze is perfectly smooth and silky. Adjust the lime juice or honey to taste.

For a spicier glaze, add a pinch of red pepper flakes along with the ginger.
The glaze can be made ahead of time and stored in an airtight container in the refrigerator for up to 5 days. Reheat gently before using.
Try this glaze on grilled chicken skewers with bell peppers and onions for a tropical-inspired meal.
