Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

In a food processor, combine ground beef, onion, bread crumbs, bell peppers, 1/3 cup ketchup, 1/4 cup pineapple preserves, 1/4 cup brown sugar, egg, Worcestershire sauce, and garlic powder; pulse until blended. Transfer to a loaf pan. (10 minutes)

03

Step

Bake in the preheated oven for 30 minutes.

04

Step

Meanwhile, in a bowl, stir 1/3 cup ketchup, 1/4 cup pineapple preserves, and 1/4 cup brown sugar together to make the glaze. (5 minutes)

05

Step

After the initial 30 minutes of baking, pour the glaze over the meatloaf.

06

Step

Continue baking until meatloaf is no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

For a deeper flavor, consider browning the ground beef and onions before adding them to the food processor.
Feel free to adjust the amount of brown sugar and pineapple preserves to your desired level of sweetness.
Serve with a side of roasted vegetables or mashed potatoes for a complete meal.

I was hesitant to try this, but I'm so glad I did! It's become a new family favorite. I added a little bit of chili powder for some extra heat.

I didn't have pineapple preserves, so I used crushed pineapple. It worked out great!

I've made this several times now, and it's always a hit. I sometimes add a can of drained pineapple chunks to the meatloaf for more pineapple flavor.
