Pack the Onions: Firmly pack the green onions vertically into the jars, alternating the direction of the tips (up and down) to maximize space and ensure a tight fit. (15 minutes)

Prepare the Brine: In a saucepan, bring the water, white vinegar, and kosher salt to a rolling boil, stirring until the salt is completely dissolved. (10 minutes)

Fill the Jars: Carefully pour the hot brine into the jars, ensuring you leave a ½-inch headspace at the top. Use a knife or thin spatula to gently dislodge any trapped air bubbles along the inside of the jars. Wipe the rims clean with a damp paper towel to remove any residue. Top with sterilized lids and screw on the rings, tightening until fingertip-tight. (10 minutes)

Process the Jars: Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and carefully lower the jars (spaced about 2 inches apart) into the boiling water using a jar holder. Add more boiling water, if needed, to ensure the jars are covered by at least 1 inch. Bring the water back to a rolling boil, cover the pot, and process for 15 minutes. (25 minutes)

Cool and Check the Seal: Remove the jars from the stockpot and place them several inches apart on a towel-lined surface. Let them rest undisturbed for 6 to 12 hours. After cooling, press the center of each lid. If the lid doesn't move up or down, the jar is properly sealed. (12 hours)

Store: Store the sealed jars in a cool, dark place, undisturbed, for at least 4 weeks before opening and enjoying. This allows the flavors to fully develop and mellow. (4 weeks)

For optimal flavor, allow the pickled onions to mature for at least 4 weeks before serving. This allows the spices to fully infuse the onions.
Once opened, store in the refrigerator.
Experiment with adding a pinch of red pepper flakes to the spice blend for a touch of heat.
These pickled onions are delicious on tacos, sandwiches, salads, or as a flavorful garnish for grilled meats and vegetables.
