Step

Caramelize the Onions & Pears: Heat olive oil in a large skillet over medium heat. Add the thinly sliced onion and cook, stirring occasionally, until softened and translucent (10-15 minutes). Stir in honey, thyme, salt, and pepper. Continue to cook until the onions are deeply golden brown and caramelized (about 10 minutes more). Gently fold in the sliced pears and cook until they are just softened, preserving their shape (2-3 minutes). Remove from heat and set aside to cool slightly.

Assemble & Cook the Quesadillas: Heat a nonstick skillet over medium heat. Lightly grease with nonstick cooking spray. Place one tortilla in the skillet, then layer with 1/4 of the Brie cheese slices, followed by 1/4 of the caramelized onion and pear mixture. Top with a second tortilla.

Press & Brown: Place a smaller skillet or a flat plate on top of the quesadilla to gently weigh it down. This helps the ingredients meld together and ensures even browning. Cook for 2-3 minutes, or until the bottom tortilla is lightly browned and the cheese begins to melt. Carefully flip the quesadilla and continue cooking for another 2-3 minutes, or until the second tortilla is golden brown and the Brie is fully melted and gooey. Transfer the cooked quesadilla to a cutting board.

Repeat & Serve: Repeat the process with the remaining tortillas, Brie cheese, and onion-pear mixture. Once all quesadillas are cooked, slice them into wedges and serve immediately. For a picnic, wrap the quesadillas individually in foil to keep them warm and prevent sticking.

For an extra layer of flavor, consider adding a sprinkle of toasted pecans or walnuts to the onion-pear mixture.
If you prefer a crisper tortilla, brush the outside with melted butter before cooking.
