Follow The Directions

01

Step
2 mins

Rinse the basmati rice under cold water until the water runs clear. Drain well. (2 minutes)

02

Step
2 mins

In a medium saucepan, heat the butter or margarine over medium heat until melted. Add the cloves, cinnamon stick, Serrano pepper, and ginger. Sauté for 1-2 minutes, or until fragrant, being careful not to burn the spices. (2 minutes)

03

Step
2 mins

Add the rinsed rice to the saucepan and stir to coat evenly with the spiced butter. Stir in the green peas, salt, and sugar. (2 minutes)

04

Step
5 mins

Pour in the water and bring to a boil over medium-high heat. (5 minutes)

05

Step
20 mins

Once boiling, reduce the heat to a very low simmer, cover the saucepan tightly, and cook for 15-20 minutes, or until all the water has been absorbed and the rice is tender and fluffy. (20 minutes)

06

Step
5 mins

Remove from heat and let the rice stand, covered, for 5 minutes before fluffing with a fork. (5 minutes)

07

Step
2 mins

Remove the cinnamon stick and cloves before serving. (2 minutes)

For an even richer flavor, use ghee (clarified butter) instead of butter or margarine.
Adjust the amount of Serrano pepper to your preference for heat. For a milder dish, remove the seeds and membranes from the pepper before chopping.
If using frozen peas, add them directly to the rice without thawing.
Be sure to use a heavy-bottomed saucepan to prevent the rice from sticking and burning.
Letting the rice stand, covered, after cooking is crucial for achieving perfectly fluffy rice.
