Prepare the Barbecue Sauce: In a medium-size skillet over medium heat, melt 2 tablespoons of butter. (5 minutes)

Smoke the Pork Shoulder: Prepare your smoker and smoke the pork shoulder at 210 degrees F for 3 to 5 hours, or until the internal meat temperature reaches 150 degrees F. (3-5 hours)

Remove the pork shoulder from the smoker, wrap it tightly in aluminum foil, and refrigerate overnight. (12 hours)

Prepare the Pulled Pork: The next day, remove any excess fat from the chilled pork shoulder. Using two forks, shred the remaining meat into a large bowl. Mix in the prepared barbecue sauce until the pork is well coated.

Assemble and Grill the Sandwiches: Butter one side of each slice of sourdough bread with softened butter.

In a skillet or on a griddle over medium heat, place two slices of buttered sourdough bread, butter-side down. Place a slice of cheese on each slice of bread. Top one slice with ? of the pulled pork mixture, then add a second slice of cheese. Top with the other slice of bread, butter-side up.

Grill the sandwich until the bottom slice of bread is golden brown and the cheese is melted and gooey, about 3-5 minutes per side. Flip the sandwich and continue grilling until the other side is golden brown and the cheese is fully melted. (5-10 minutes)

For a spicier kick, leave the seeds in the jalapeno pepper.
If you don't have a smoker, you can slow-cook the pork shoulder in a slow cooker or oven until it's tender enough to shred.
Experiment with different types of cheese! Gruyere, provolone, or pepper jack would also be delicious.
For extra flavor, add a layer of caramelized onions or pickled onions to the sandwich before grilling.
