Arrange the ham, potato slices, and leek in the dish in an overlapping layer. Pour the remaining whipping cream mixture evenly over the top. (10 minutes)

Sprinkle the salt and 1/2 teaspoon of the ground black pepper evenly over the gratin. Then, top with the shredded Monterey Jack cheese. (5 minutes)

Cover the baking dish tightly with aluminum foil and bake for 40 minutes. (40 minutes)

Remove the foil and continue baking until the potatoes are tender and the top is golden brown and bubbly, approximately 20 minutes more. (20 minutes)

Remove from the oven and let stand for 15 minutes before serving. (15 minutes)

Garnish with the remaining 1/2 teaspoon of ground black pepper and the thinly sliced green onion before serving.

For a richer flavor, use full-fat Greek yogurt.
Adjust the amount of red curry paste to your preference for spice.
If you don't have Yukon gold potatoes, red potatoes will also work well.
Ensure the potatoes are sliced thinly and evenly to ensure they cook through in the allotted time.
To prevent the cheese from browning too quickly, you can cover the gratin with foil for the last 10 minutes of baking.
This gratin is excellent served with a side salad for a complete meal.
