In a medium-sized saucepan, melt the butter over medium heat. (2 minutes)

Add the granulated sugar and brown sugar. Stir constantly until the mixture comes to a boil. (3 minutes)

Allow the glaze to cool completely at room temperature, which will take approximately 30-45 minutes. This allows it to thicken slightly.

For a thicker glaze, chill in the refrigerator for at least 8 hours, or preferably overnight.

For a smoother glaze, use a whisk to stir the ingredients, especially when adding the cream.
The glaze will thicken as it cools. If it becomes too thick after refrigeration, gently warm it in the microwave or over a double boiler until it reaches the desired consistency.
Adjust the amount of sea salt to your preference. Start with 1/2 teaspoon and add more to taste.
The glaze can be stored in an airtight container in the refrigerator for up to 2 weeks.
