For an even smoother gravy, strain it through a fine-mesh sieve before serving. If you don't have enough turkey drippings, supplement with melted butter to reach the required 1/2 cup of fat. Taste the gravy before seasoning, as the turkey drippings and stock may already contain salt. If the gravy becomes too thick, whisk in a little more turkey stock or water to thin it out. Make the gravy ahead of time and reheat it gently on the stovetop or in the microwave before serving.
