Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). Lightly coat a 9x13-inch baking dish with cooking spray. (5 minutes)

02

Step

In a large bowl, combine the thawed corn, softened cream cheese, Mexican-blend cheese, and diced jalapeno peppers. Mix until all ingredients are thoroughly combined and evenly distributed. (10 minutes)

03

Step

Transfer the mixture to the prepared baking dish, spreading it evenly. (2 minutes)

04

Step

Bake in the preheated oven for 20 minutes, or until the dip is heated through and bubbly around the edges.

05

Step

While the dip is baking, cook the bacon in a large skillet over medium-high heat until crispy. (10 minutes) Remove bacon from skillet and place on paper towels to drain. Once cool enough to handle, chop or crumble the bacon into small pieces.

06

Step

Remove the dip from the oven. Sprinkle the crumbled bacon and shredded Parmesan cheese evenly over the top. (2 minutes)

07

Step

Return the dish to the oven and bake for an additional 10 minutes, or until the Parmesan cheese is melted and lightly golden brown.

For an extra layer of flavor, consider adding a packet of taco seasoning to the cream cheese mixture.
Adjust the amount of jalapenos to your preference. If you prefer a milder dip, use less jalapenos or remove the seeds and membranes before dicing.
Feel free to substitute the Mexican-blend cheese with your favorite cheese, such as cheddar, Monterey Jack, or Colby Jack.
This dip can be made ahead of time. Prepare the dip up to the point of baking, cover, and refrigerate. When ready to bake, add a few extra minutes to the baking time to ensure it is heated through.
