Follow The Directions

Step

Preheat the oven to 400 degrees F (200 degrees C). Lightly spray a muffin tin with cooking spray. (2 minutes)

Spread rice in an even layer on a rimmed baking sheet to cool slightly, and sprinkle with 1 teaspoon of the rice vinegar. (3 minutes)

In a medium bowl, whisk together mayonnaise, Sriracha, and remaining 1 tablespoon rice vinegar until well combined. Transfer 1/4 cup of the mayonnaise mixture to a separate small bowl; reserve for drizzling later. (5 minutes)

In the remaining mayonnaise mixture in the medium bowl, stir in soy sauce. Add the shrimp and toss to coat evenly. (3 minutes)

Place a nori square into each prepared muffin cup. With damp hands, toss rice on rimmed baking sheet to separate grains. Top each nori square with about 2 1/2 tablespoons of rice, and gently press into the bottom of the muffin cup. Neatly arrange about 3 shrimp on top of the rice in each cup, discarding any remaining mayonnaise mixture from the bowl of shrimp. (15 minutes)

In a small bowl, stir together panko and canola oil until the panko is lightly moistened. (2 minutes)

Bake the shrimp cups in the preheated oven for 8 minutes. Remove from oven, and sprinkle each cup with a generous pinch of the panko mixture. Return to oven, and continue baking until shrimp are cooked through and panko is golden brown, approximately 6 to 7 minutes longer. (15 minutes)

Carefully remove the baked cups from the muffin tin and arrange them on a serving platter. Drizzle with the reserved mayonnaise mixture, then sprinkle generously with white and black sesame seeds and scallions. Top each cup with a small amount of finely chopped avocado. Serve immediately while hot and enjoy! (5 minutes)

For an extra layer of flavor, try adding a pinch of furikake seasoning to the rice.
If you don't have Kewpie mayonnaise, you can substitute regular mayonnaise with a pinch of sugar and a dash of rice vinegar.
Feel free to adjust the amount of Sriracha to your preferred level of spiciness.
These cups are best served immediately, but can be assembled ahead of time and baked just before serving.
