Follow The Directions

01

Step
0 mins

Gather all ingredients.

02

Step
1 hrs

In a saucepan, combine the turkey giblets, neck, and 4 cups of water. Bring to a boil, then reduce heat to low and simmer until the broth is reduced to approximately 3 cups (about 1 hour).

03

Step
5 mins

Strain the broth through a fine-mesh sieve, reserving 1/2 cup of the cooked giblets.

04

Step
5 mins

In a separate saucepan, combine the strained broth and turkey drippings over medium heat. In a small bowl, whisk together the 1/2 cup of cold water and cornstarch until smooth. Pour this slurry into the broth mixture and bring to a boil, stirring constantly.

05

Step
5 mins

While the broth is heating, finely chop the reserved giblets.

06

Step
5 mins

Reduce the heat to low. Stir in the chopped giblets and hard-cooked egg into the gravy.

07

Step
5 mins

Simmer gently until the gravy has thickened to your desired consistency (about 5 minutes). Season to taste with salt and freshly ground black pepper.

For an even richer flavor, consider browning the giblets in a little butter or oil before simmering them in water.
If you don't have enough turkey drippings, you can supplement with chicken broth.
To avoid lumps, make sure the cornstarch slurry is completely smooth before adding it to the broth.
Taste the gravy frequently during the final simmering stage and adjust the seasoning as needed.
A splash of dry sherry or Madeira wine can add a sophisticated depth of flavor to the finished gravy.
