Remove mushrooms, coarsely chop, and set aside. Ensure about 1 cup of butter remains in the pot. Whisk in flour, gently cooking over low heat until a mahogany brown roux forms, about 20 minutes. Gradually whisk in chicken broth, bringing the mixture to a simmer until thickened.

In a separate saucepan, pour turkey drippings. Sauté onions and celery in drippings over medium-low heat until onions begin to caramelize, about 20 minutes. Stir the drippings and vegetables into the thickened stock. Bring the gravy to a gentle boil, reduce heat, and simmer for about 20 minutes to allow the flavors to meld. Stir in the chopped mushrooms, then season to taste with salt, black pepper, and cayenne pepper.

For an even richer flavor, consider using a combination of chicken and turkey broth.
The key to a smooth gravy is to whisk constantly while adding the broth to the roux.
Adjust the amount of cayenne pepper to your preference for heat.
