In a large, heavy-bottomed 12-quart pot, heat the avocado oil over medium-high heat. Add the chopped onions and sauté until they become translucent and fragrant, approximately 5 minutes.

Introduce the rinsed black beans to the pot, then add enough fresh water to submerge the beans by 3 to 4 inches. Stir in the tomato paste, sliced garlic, dried onion, mustard seeds, dried pasilla chile pods, cinnamon sticks, ground cardamom, cumin seeds, dried Mexican oregano, brown sugar, and dried epazote.

Bring the mixture to a vigorous boil.

Reduce the heat to low, cover the pot tightly, and allow the beans to simmer gently until they are wonderfully tender, stirring occasionally to prevent sticking. This process will take approximately 3 1/2 to 4 hours.

Remove the lid and increase the heat to high. Continue to boil, stirring frequently and deliberately from the bottom of the pot to prevent scorching. As you stir, gently mash some of the beans against the side of the pot to help thicken the sauce. Continue this process until the sauce reaches your desired consistency, about 30 minutes.

Season the beans generously with salt to taste. Serve hot, garnished with your favorite fresh toppings such as cilantro, avocado, or a squeeze of lime.

For an even deeper flavor, toast the cumin seeds and mustard seeds in a dry pan over medium heat for a few minutes before adding them to the pot. This will enhance their aroma and complexity.
If you prefer a smokier flavor, consider adding a chipotle pepper in adobo sauce to the beans during the simmering process. Be sure to remove it before serving!
Dried epazote can be difficult to find; if unavailable, substitute with a pinch of anise seeds or a few sprigs of fresh cilantro.
Adjust the amount of chili pods to your spice preference. For a milder flavor, remove the seeds and veins from the pasilla pods before adding them to the pot.
These beans can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors will meld and deepen over time.
