Follow The Directions

01

Step
0 mins

Empty 1 can black beans into a blender. Pour in chicken broth. Cover and purée until smooth. Set aside.

02

Step
5 mins

Heat a large saucepan coated with cooking spray over medium-high heat; cook and stir onion and garlic in the saucepan until onion is tender, about 5 minutes.

03

Step
0 mins

Stir remaining 1 can black beans and liquid, tomatoes, yogurt, lime juice, cumin, red pepper flakes, and puréed beans into onion mixture; bring to a boil.

04

Step
30 mins

Reduce heat to low, cover, and simmer for 25 to 30 minutes, stirring occasionally. Garnish with cilantro to serve.

For a smoother soup, use an immersion blender to purée a portion of the soup directly in the pot before simmering.
Add a dollop of sour cream or a swirl of hot sauce for extra flavor and richness.
This soup is even better the next day, as the flavors have had time to meld together.
