For enhanced flavor, toast the farro in a dry pan for a few minutes before cooking.
Fresh mozzarella pearls are recommended for their creamy texture, but cubed fresh mozzarella will also work.
To toast the almonds, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until lightly golden.
Make sure the farro is completely cool before adding the other ingredients to prevent the mozzarella from melting.
This salad is best served fresh, but can be stored in the refrigerator for up to 2 days. The basil may wilt slightly.
