In a bowl, thoroughly combine the Gruyere cheese and panko bread crumbs. Set aside. (2 minutes)

In a large skillet, melt the butter over medium heat. Add the zucchini, yellow squash, shallots, and garlic. Cook, stirring frequently, until the vegetables have softened, approximately 10 minutes. Stir in the fresh basil, rosemary, salt, and pepper; cook until the herbs release their fragrance, about 1 minute. (11 minutes)

Evenly mix in the all-purpose flour into the skillet with the vegetables. Slowly pour in the light cream while stirring continuously until the mixture thickens slightly, approximately 3 to 5 minutes. Remove from heat, and stir in half of the cheese mixture. (5 minutes)

Pour the zucchini mixture into a greased baking dish. Sprinkle the remaining cheese mixture evenly over the top. (3 minutes)

Bake in the preheated oven until the gratin is bubbly and the topping is golden brown, approximately 20 minutes. (20 minutes)

For an even richer flavor, consider using heavy cream instead of light cream.
A mandoline slicer can ensure uniformly thin slices of zucchini and squash.
If you don't have shallots, a small yellow onion can be substituted.
