Follow The Directions

01

Step
25 mins

Prepare the Chicken: Cut the chickens into pieces, reserving the breasts. In a deep saucepan, combine chicken pieces (excluding the breasts), onion, garlic, and chicken broth. Cover and simmer for 25 minutes.

02

Step
20 mins

Add Chicken Breasts: Cut the reserved chicken breasts in half and add them to the saucepan. Continue to simmer until the breasts are cooked through, about 20 minutes more. Ensure an instant-read thermometer inserted near the bone reaches 165 degrees F (74 degrees C).

03

Step
5 mins

Debone and Shred: Remove the chicken to a cutting board. Discard the skin and bones, then cut the chicken meat into bite-sized pieces.

04

Step
10 mins

Strain and Reserve Broth: Strain the broth through a fine-mesh strainer, reserving the liquid (approximately 3 cups). Discard the solids and skim off any excess fat. Adjust the liquid to 3 cups by adding water if needed or reducing it by boiling.

05

Step

Blend the Mole: In a blender, combine chili powder, almonds, banana, cinnamon, salt, tortilla pieces, sesame seeds, and pine nuts. Slowly pour in the reserved liquid while blending on low until smooth.

06

Step

Create the Sauce: Transfer the blended mixture and remaining liquid to a large saucepan over medium heat. Add the butter and chocolate, stirring until melted and fully incorporated.

07

Step

Combine Chicken and Sauce: Add the shredded chicken to the mole sauce. Continue cooking until the chicken is heated through, approximately 5 to 10 minutes.

For a deeper flavor, toast the almonds and sesame seeds before blending.
Adjust the amount of chili powder to your preference for spice.
Serve with a dollop of Mexican crema or sour cream for added richness.

Easy to follow, and the result was amazing! I added a pinch of cayenne pepper for extra heat.

I was a little hesitant about the banana, but it adds a lovely sweetness that balances the spice perfectly. My family loved it!

This recipe is incredible! The mole sauce is so complex and flavorful. It takes some time, but it's well worth the effort.
