Follow The Directions

01

Step
11 mins

Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to package directions, about 8 minutes, until al dente. During the last 2 to 3 minutes of cooking time, add the cooked shrimp to the pot to gently heat through.

02

Step
3 mins

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the asparagus and red pepper flakes (if using), and cook, stirring frequently, for about 3 minutes, until the asparagus begins to brighten in color.

03

Step
5 mins

Add the minced garlic to the skillet and continue to cook for another 4 to 5 minutes, stirring constantly, until the asparagus is tender-crisp and the garlic is fragrant, being careful not to burn the garlic.

04

Step
1 mins

Reserve about 1/2 cup of the pasta water before draining. Drain the pasta and shrimp in a colander.

05

Step
2 mins

Transfer the drained pasta and shrimp to a large serving bowl. Add the cooked asparagus mixture and Parmesan cheese. Toss gently but thoroughly to combine, adding a splash of the reserved pasta water if needed to create a light sauce that coats the pasta.

06

Step
1 mins

Season generously with sea salt and freshly ground black pepper to taste. Serve immediately, with extra Parmesan cheese on the side, if desired.

For an extra layer of flavor, consider adding a squeeze of fresh lemon juice to the finished dish.
If you don't have fresh asparagus, frozen asparagus spears can be used. Add them to the skillet directly from frozen and cook for a few minutes longer.
Feel free to experiment with other types of pasta, such as farfalle or rotini.
To make this dish vegetarian, simply omit the shrimp and add some sautéed mushrooms or sun-dried tomatoes for added flavor and texture.
