For a richer flavor, substitute half-and-half or cream for some of the milk. Fresh herbs can be used in place of dried herbs. Use about 1 teaspoon of each fresh herb. Adjust the amount of seafood broth to achieve your desired sauce consistency. If you don't have enough seafood broth, you can use chicken broth or vegetable broth. Ensure the scallops are dry before poaching to get a better sear and texture.
