For an extra layer of flavor, try adding a pinch of red pepper flakes to the butter mixture. If you don't have a grill, you can cook the scampi under the broiler. Broil for 3-5 minutes, watching carefully to prevent burning. Fresh parsley or basil can be used in place of, or in addition to, the oregano. Serve with crusty bread to soak up the delicious garlic butter.
