Combine about 4 inches of water and the lemon juice in the Instant Pot. Add the sliced apples to the pot as you slice them to prevent browning. (5 minutes)

Close and lock the lid of the Instant Pot. Select the 'Pressure Cook' or 'Manual' setting on high pressure and set the timer for 8 minutes. Allow 10-15 minutes for the pressure to build. (18-23 minutes)

Once the cooking time is complete, allow the pressure to release naturally for 10-40 minutes. Then, carefully release any remaining pressure manually according to the manufacturer's instructions. (10-40 minutes)

Remove and discard the cinnamon sticks. Use an immersion blender to purée the apple mixture until smooth. Stir well with a spoon to ensure even consistency. (5 minutes)

After slow cooking, check the consistency of the apple butter by dropping a small spoonful onto a chilled plate. Refrigerate for 10 minutes. If the apple butter sets to a spreadable consistency, it is ready. If it's too thin, continue slow cooking for another hour, checking periodically. (Variable)
