For a milder sauce, remove the seeds and membranes from the Scotch bonnet peppers before blending. You can also substitute with milder peppers like jalapenos.
If you don't have fresh thyme, you can use 1 tablespoon of dried thyme.
This sauce is excellent with grilled chicken, pork, fish, or vegetables. Try marinating your protein for at least 2 hours, or up to overnight, for maximum flavor.
For a smoother sauce, strain it through a fine-mesh sieve after blending.
The peanut oil can be substituted with other neutral oils like canola or vegetable oil.
