Shred and Glaze: Remove beef cheeks from the pot using a slotted spoon. Place on a cutting board and shred into bite-sized pieces using two forks. Return the shredded beef to the pot with the braising liquid. Increase the heat to medium and cook, stirring frequently, until the liquid has reduced and thickened into a glaze. (Approximately 10-15 minutes).

Feel free to adjust the amount of kimchi to your liking. For a milder flavor, rinse the kimchi before chopping.
