Follow The Directions

01

Step

Preheat oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step

Heat the vegetable oil in a large skillet over medium heat. (2 minutes)

03

Step

Season the mahi mahi fillets with thyme, salt, and pepper. Place in the hot skillet, cover, and cook for 7 minutes. Flip the fillets and cook until the flesh flakes easily with a fork, approximately 5-7 minutes. (14 minutes)

04

Step

Transfer the mahi mahi to a cutting board and cut into bite-sized pieces, carefully removing any visible bones. (5 minutes)

05

Step

In a saucepan, combine the cream of potato soup, milk, and mixed vegetables over medium heat. Season with salt and pepper. Simmer, stirring occasionally, for 5 minutes. (7 minutes)

06

Step

Gently fold the mahi mahi pieces into the soup mixture. (2 minutes)

07

Step

Line a 9-inch deep-dish pie plate with one of the pie crusts. (3 minutes)

08

Step

Pour the soup mixture with the mahi mahi into the prepared pie crust. (1 minute)

09

Step

Top with the remaining pie crust. Seal the edges with wet fingertips or crimp with a fork. Cut a few slits in the top crust to allow steam to escape. (5 minutes)

10

Step

Bake in the preheated oven until the crust is golden brown and the filling is heated through, about 40-45 minutes. (45 minutes)

11

Step

Let cool for 10-15 minutes before serving. This allows the filling to set slightly and prevents burning your mouth! (15 minutes)

For an extra layer of flavor, consider adding a splash of dry sherry or white wine to the soup mixture.
Fresh herbs, such as parsley or dill, can be added to the filling for a brighter taste.
If you prefer a thicker filling, whisk a tablespoon of cornstarch with a tablespoon of cold water and stir into the soup mixture while simmering.
To prevent the crust from browning too quickly, cover the edges with foil during the last 15-20 minutes of baking.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the oven for best results.
