For a richer flavor, substitute milk for water. Dairy or non-dairy milk alternatives both work great. Adjust the amount of piloncillo or brown sugar to your desired sweetness. A pinch of salt can enhance the flavors of the atole. If you don't have piloncillo, use dark brown sugar. The molasses in the dark brown sugar will give it a similar depth of flavor. For a chocolate version, add a tablespoon of cocoa powder to the blender.
