For an authentic touch, use shrimp paste (bagoong) instead of salt to season the dish. Start with a small amount and adjust to taste.
Adjust the amount of bitter melon to your preference. Soaking the sliced bitter melon in salted water for 15 minutes can help reduce its bitterness.
Feel free to add other vegetables such as squash or long beans to customize the dish.
