Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

In a medium bowl, combine ½ cup brown sugar, ½ cup flour, oats, and cubed butter. Use a pastry blender or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs. (10 minutes)

03

Step

Press the crumb mixture firmly into the bottom of a 9-inch square baking pan. (5 minutes)

04

Step

Bake in the preheated oven for 15 minutes, or until the crust is lightly golden.

05

Step

While the crust is baking, prepare the filling. In the same bowl (no need to wash it!), combine the remaining ½ cup brown sugar, remaining ½ cup flour, eggs, vanilla, baking powder, and salt. Mix until well combined. (5 minutes)

06

Step

Stir in the raisins, coconut, and drained sour cherries. If the filling seems too thick, add 1-2 tablespoons of the reserved cherry juice to moisten it slightly. (3 minutes)

07

Step

Spread the filling evenly over the baked crust. (2 minutes)

08

Step

Return the pan to the oven and bake for 30 minutes, or until the filling is firm and lightly browned. (30 minutes)

09

Step

Let the squares cool completely in the pan before cutting them into bars. (60 minutes)

For a richer flavor, use dark brown sugar instead of light brown sugar.
If you don't have sour cherries, you can substitute dried cranberries or other dried fruit.
To make the squares easier to cut, chill them in the refrigerator for 30 minutes after they have cooled to room temperature.
Store the raisin squares in an airtight container at room temperature for up to 3 days.
