Bring the mixture to a boil over high heat, then reduce heat to low and simmer for 5 minutes to allow the spices to infuse the syrup. (6 minutes)

Remove from heat and let the syrup cool completely. (30 minutes)

Pour the cooled syrup through a fine-mesh strainer to remove the spices. (2 minutes)

Transfer the strained syrup to a jar with a lid and store in the refrigerator. Shake well before using. (2 minutes)

Sangria: In a large pitcher, combine the red wine, spiced simple syrup, sparkling water, and fresh orange juice. Add the orange, lemon, and lime slices. Stir gently to combine. (3 minutes)

Serve the sangria over ice in large red wine glasses. Garnish with extra fruit slices, if desired. (2 minutes)

For the best flavor, allow the sangria to chill in the refrigerator for at least 30 minutes before serving to allow the fruit flavors to meld. Overnight is even better!
Adjust the amount of spiced simple syrup to your desired sweetness. Taste and add more as needed.
Use a good quality red wine, such as a Rioja or Garnacha, for the most authentic flavor.
Feel free to experiment with other fruits, such as apples, pears, or berries, depending on the season.
If you don't have sparkling water, you can use club soda or ginger ale for a slightly different flavor profile.
