Follow The Directions

01

Step

Bring a large pot of lightly salted water to a rolling boil over high heat. Add the penne and cook uncovered, stirring occasionally, until al dente, about 11 minutes. Drain well.

02

Step

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and onion and sauté until softened and translucent, about 5 minutes.

03

Step

Stir in the diced tomatoes and simmer until heated through, about 5 minutes.

04

Step

Add the lemon juice and shrimp. Cook, stirring occasionally, until the shrimp are pink and opaque, about 5 minutes.

05

Step

Stir in the fresh parsley, then season with salt, pepper, and red pepper flakes to taste.

06

Step

Serve the shrimp and sauce immediately over the prepared penne pasta. Sprinkle with Parmesan cheese before serving.

For a richer flavor, use good quality extra virgin olive oil.
Adjust the amount of red pepper flakes to your desired level of spiciness.
Fresh basil can be substituted for parsley.
If you don't have penne pasta, you can use another short pasta shape, such as rigatoni or farfalle.
