Return the pan to the oven and bake for an additional 20-25 minutes, or until the topping is set and lightly browned. (25 minutes)

For a richer flavor, toast the walnuts before adding them to the batter.
Feel free to substitute dried cranberries or other chopped dried fruit for the maraschino cherries.
These bars are even better the next day, after the flavors have had a chance to meld.
Optional frosting: Whisk together 2 cups powdered sugar, 1 egg white, and 2 tablespoons maraschino cherry juice (or milk) until smooth. Drizzle over cooled bars.
