Follow The Directions

01

Step
5 mins

Pat the chicken breasts dry with paper towels. Sprinkle with half of the Cajun seasoning, salt, and pepper. Set aside. (Prep time: 5 minutes)

02

Step
7 mins

Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and sear, turning occasionally, until golden brown and cooked through. The internal temperature should reach 165°F (74°C). This usually takes 5-7 minutes.

03

Step
6 mins

Transfer the chicken to a plate and set aside, keeping warm. Leave the flavorful drippings in the skillet.

04

Step
3 mins

Add the sliced green onions and red bell pepper to the skillet. Sauté until softened, about 2 minutes.

05

Step
3 mins

Pour in the chicken broth and white wine. Bring to a boil, scraping up any browned bits from the bottom of the pan. Reduce the heat and simmer until the sauce reduces to about 3/4 cup, approximately 5 minutes.

06

Step

Stir in the heavy cream and continue to simmer until the sauce thickens slightly, about 1-2 minutes.

07

Step

Gently fold in the halved cherry tomatoes and chopped cilantro, along with the remaining Cajun seasoning. Season to taste with salt and pepper.

08

Step

Return the chicken to the skillet. Cover and cook until heated through, about 2-3 minutes. Ensure the chicken is thoroughly warmed in the sauce.

For a richer flavor, consider using bone-in, skin-on chicken thighs. Adjust cooking time accordingly.
If you don't have white wine, you can substitute with more chicken broth and a squeeze of lemon juice.
Serve over creamy mashed potatoes, rice, pasta, or alongside roasted vegetables like asparagus or green beans.
Garnish with extra fresh cilantro and a sprinkle of red pepper flakes for added heat.
