For a richer flavor, use dark chocolate chips instead of semi-sweet. Add a pinch of sea salt to the oat mixture to enhance the sweetness. If you don't have walnuts, pecans or almonds make excellent substitutes. Store the set cookies in an airtight container at room temperature for up to a week. For a smoother texture, melt the chocolate chips separately and drizzle over the cookies after they've been spooned onto the wax paper.
