In a large, heavy-bottomed pot or Dutch oven, combine the bell pepper, onion, celery (reserve a few leaves for garnish), broccoli, corn, chicken, and garlic. (5 minutes)

Season generously with basil, oregano, rosemary, parsley, salt, and pepper. Stir in the crumbled bouillon cubes. (2 minutes)

Pour in enough water to cover the ingredients by approximately 2 inches. (1 minute)

Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer gently for 2 hours, stirring occasionally to prevent sticking. (120 minutes)

For a richer flavor, consider using chicken broth instead of water.
Feel free to add other vegetables such as carrots, zucchini, or potatoes.
Fresh herbs are highly recommended for the best flavor, but dried herbs can be substituted (use about 1 teaspoon of each).
Adjust the seasoning to your preference. A pinch of red pepper flakes can add a touch of heat.
Garnish with reserved celery leaves or a dollop of Greek yogurt or sour cream before serving.
