Arrange the cooked vegetables on top of the noodles, followed by the lemon-glazed prawns. Drizzle the remaining sauce over the top to taste. Serve immediately. (Prep time: 3 minutes)

For a richer flavor, try adding a splash of sesame oil to the sauce.
Feel free to substitute other vegetables like broccoli florets, snap peas, or carrots.
If you don't have fresh udon noodles, dried udon or even spaghetti can be used as a substitute.
Adjust the amount of brown sugar to your liking, depending on how sweet you prefer the sauce.
For a spicier kick, add a pinch of red pepper flakes to the sauce or a drizzle of sriracha at the end.
