Follow The Directions

01

Step
2 mins

Prepare the Salmon: Season salmon steaks generously with salt and pepper. (1 minute)

02

Step
5 mins

Sear the Salmon: Heat 2 tablespoons of cooking oil in a skillet over medium-high heat. Carefully place the salmon steaks in the hot oil and sear for 2-3 minutes per side, until lightly browned. Remove from the skillet and set aside. (6 minutes)

03

Step
4 mins

Sauté Aromatics: Add the remaining 1 tablespoon of oil to the skillet. Add the chopped onion and cook until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. (5 minutes)

04

Step
6 mins

Create the Sarciado Sauce: Stir in the diced tomatoes and season with salt and pepper. Cook, stirring occasionally, until the tomatoes break down and form a thick sauce, about 8-10 minutes. (10 minutes)

05

Step
9 mins

Simmer the Salmon: Return the seared salmon steaks to the skillet, nestling them in the tomato sauce. Reduce heat to medium-low, cover, and simmer for 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork. (7 minutes)

06

Step
2 mins

Finish with Egg: Gently stir in the beaten egg into the sauce, allowing it to cook and thicken slightly, about 1-2 minutes. (2 minutes)

07

Step
1 mins

Serve: Serve the Salmon Sarciado hot, spooning the flavorful sauce over the salmon. Garnish with fresh parsley, if desired. Best served with steamed rice.

For a richer sauce, add a tablespoon of tomato paste along with the diced tomatoes.
Feel free to add other vegetables like bell peppers or green beans to the sauce.
If you don't have fresh tomatoes, you can use canned diced tomatoes.
Be careful not to overcook the salmon, as it can become dry.
A squeeze of lemon or calamansi juice at the end adds a bright touch.
