For richer noodles, use bread flour instead of all-purpose flour. If you don't have time to dry the noodles completely, you can cook them immediately after cutting, but be sure to use plenty of liquid to prevent sticking. Homemade noodles can be stored in the refrigerator for up to 2 days or frozen for up to 2 months. If freezing, spread the noodles out on a baking sheet to freeze individually before transferring them to a freezer bag.
