Poach the Chicken: Place chicken breasts in a saucepan and cover with cold water. Bring to a gentle simmer over medium heat (approximately 5 minutes), then reduce heat to low, cover, and poach for 18-22 minutes, or until the chicken is cooked through and no longer pink inside. Remove from the pan and let cool slightly.

Make the Aioli: While the chicken is poaching, prepare the aioli. In a medium bowl, whisk together the egg yolks and minced garlic until the mixture is pale and slightly thickened. (approximately 2 minutes). Gradually drizzle in the olive oil, whisking constantly, until the aioli is thick and emulsified. Stir in the lemon juice and season with salt and pepper to taste. (approximately 5 minutes).

Assemble the Salad: Once the chicken is cool enough to handle, shred or dice it into small, bite-sized pieces. (approximately 5 minutes). In a large bowl, combine the shredded chicken, Kalamata olives, sun-dried tomatoes, and thyme. Add about 3/4 cup of the prepared aioli to the chicken mixture and toss gently to coat. Taste and adjust seasoning as needed, adding more lemon juice, salt, or pepper to your preference.

Chill and Serve: Cover the chicken salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled on your favorite bread, croissants, or lettuce cups. Enjoy!

For a richer flavor, try using roasted garlic in the aioli.
If you don't have sun-dried tomatoes packed in oil, you can rehydrate dry-packed tomatoes in warm water for about 15 minutes.
Add a touch of Dijon mustard to the aioli for an extra layer of flavor.
This chicken salad is also delicious with a sprinkle of fresh parsley or chives.
