Recipe View Preheat the oven to 350 degrees F (175 degrees C). Blind bake the pie crust until golden brown, approximately 15 minutes. Remove from the oven and let it cool completely.

Recipe View In a medium saucepan, whisk together the coconut milk, milk, and 1 cup of sugar. In a separate bowl, dissolve the cornstarch in the water until smooth. Bring the coconut milk mixture to a simmer over medium heat. Gradually whisk in the cornstarch slurry, stirring constantly until the mixture thickens to a pudding-like consistency, about 3 minutes.

Recipe View Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total. Divide the coconut pudding evenly into two separate bowls. Stir the melted chocolate into one portion until well combined. Spread the chocolate haupia evenly across the bottom of the cooled pie crust. Pour the remaining plain haupia on top of the chocolate layer, spreading it smoothly and evenly. Refrigerate the pie for at least 1 hour to allow the filling to set completely.

Recipe View In a chilled glass or metal bowl, whip the heavy cream with an electric mixer until it begins to thicken and form soft peaks. Gradually add the remaining 1/4 cup of sugar, continuing to whip until stiff peaks form. Carefully spread the whipped cream evenly over the top of the chilled pie. Serve chilled and enjoy!

For a richer chocolate flavor, use dark chocolate chips instead of semi-sweet.
To prevent the pie crust from puffing up during baking, prick the bottom with a fork before baking and/or use pie weights.
If you don't have time to make your own pie crust, a store-bought crust will work just fine.
